Ingredients:
- ¼ cup raw sunflower seeds
- ¼ cup raw walnuts
- ¼ cup raw pumpkin seeds
- 1 cup organic carrots, finely diced
- 3 stalks organic celery, finely diced
- ¼ cup organic raisins
- ½ cup organic green onions, thinly sliced
- 1 tsp. fresh ginger, peeled and grated
- 1/2 tsp. organic turmeric
- 1/2 tsp. organic cumin
- 1/2 tsp. organic cinnamon
Directions:
- Soak nuts and seeds for 6-8 hours, drain and rinse.
- Add 1+ Tbsp of water and scrape sides as needed.
- Place nuts and seeds and carrots in food processor and process until finely chopped.
- Mix together with the rest of the ingredients in a bowl.
- Optional: Stir in add-ins as desired (stone ground mustard, avocado mayo, plain yogurt, or avocado to taste).
- Serve in romaine lettuce leaves, roll up in chard, spread on cucumber slices or whole grain Non-GMO crackers.
- Top with sprouts.
