Cracker Jack Popcorn

Ingredients:

  • 1 ½ cups organic popcorn kernels
  • 6 Tbsp. organic peanut or almond butter
  • 6 Tbsp. local raw honey
  • 2 Tbsp. blackstrap molasses (don’t use other kind of molasses)

 

Directions:

  1. Pop 3 batches (1/2 cup each) of popcorn in an air popper. 
  2. Melt peanut butter, honey, and blackstrap molasses over low heat in a small pan on the stove, then pour over the popcorn, and mix well.  It will seem like it isn’t going to cover such a large amount of popcorn, but if you keep stirring it will eventually coat well. 
  3. Divide into 3 small batches & put one batch at a time onto large baking pan & bake at 250 degrees for 20 minutes, stirring after ten minutes. 
  4. Enjoy!
