Fudge Pops

Ingredients:

  • 2/3 cup pure maple syrup
  • 1/2 cup organic cocoa powder (I use NOW brand)
  • 2 tsp. real vanilla extract
  • 1 cup + 1 Tbsp. organic plain yogurt (or non-dairy yogurt)
  • 1 1/4 cups organic coconut milk, unsweetened

Directions:

  1. In a medium sized bowl whisk together the syrup, cocoa powder, and vanilla until thoroughly combined and there are almost no clumps left.
  2. Slowly whisk in both the yogurt and milk.
  3. Pour into popsicle molds or 5 oz. paper cups and place in the freezer for 5 hours or overnight.
  4. To serve, run warm water on the outside of the mold or cup to loosen so the popsicles come out easily.

Note: Makes 6 fudge pops for popsicle molds or 9 fudge pops in 5 oz. paper cups.
